I was given this recipe after attending the baptism of a Samoan man. They had the biggest food spread, all wonderfully delicious foods. This is a Samoan coconut bread and is pronounced "Paw-knee Poa Poa."
Sweet Dinner Rolls (or whatever dinner roll recipe you normally use)
1/2 cup warm water
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 tsp. salt
3 3/4 cups all-purpose flour
1 (.25 oz) package active dry yeast
1/4 cup butter, softened
1. Dissolve yeast and 1 Tbsp. sugar in warm water. Let sit for about 10 min.
2. Meanwhile, warm milk in saucepan until it just bubbles. Remove from heat, stir in sugar and butter until melted and cool to lukewarm.
3. In a large bowl, combine yeast mixture, milk mixture and egg. Stir in flour a little at a time and knead on lightly floured surface about 8 min.
4. Cover and let rise about 1 hour, then punch down.
5. Turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end, roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place. Let rise 1 hour.
Pani Popo
1 can coconut milk
1/3 cup brown sugar
After the rolls have risen for 1 hour, pour mixture over the rolls and bake at 375 degrees for 15-17 minutes.
